Recipe for Gajar Halwa (Carrot Pudding) - Chef Rodricks

500 Grams Carrot
200 Grams Khoya/Mawa
125 Grams Sugar
10 to 15 pcs Almond (Blanched)
4 Oz Broken Cashew Nut
50 gm Ghee or Butter
1/4 Teaspoon cardamom Powder
16 Oz Milk

Method

Wash and grate the carrots

Boil milk on medium on medium heat until it is reduced.  Set aside.

Melt Ghee or butter in a Pan on medium heat.

Add the carrots and stir fry for 10 mins till tender and slightly changed in color. Add milk
and keep stirring to cook till the milk dries up.

Add sugar, Cardamom, khoya and cook for another 5 mins.

Garnish with Cashew nuts and almonds
